Serves 4

Ingredients:

  • Cut up vegetables (carrots, turnips, beets, chard stems, etc.)
  • ½ cup water
  • ½ cup vinegar (white, apple cider, rice wine, etc)
  • 1/3 cup sugar

Optional:

  • Garlic cloves
  • Black pepper corns
  • Mustard seeds

Directions:

  1. Rinse vegetables. Cut into bite size pieces. Smaller pieces will absorb flavor faster. Put into a glass container. Mason jars work well.
  2. Combine water, sugar, and vinegar in a small saucepan. Heat and stir until sugar is dissolved.
  3. Pour hot liquid over vegetables.
  4. Put in refrigerator. They are ready to use within 30 minutes. Will store for up to 2 weeks.
