Serves 4
    Ingredients:
  
- Cut up vegetables (carrots, turnips, beets, chard stems, etc.)
 - ½ cup water
 - ½ cup vinegar (white, apple cider, rice wine, etc)
 - 1/3 cup sugar
 
Optional:
- Garlic cloves
 - Black pepper corns
 - Mustard seeds
 
    Directions:
  
- Rinse vegetables. Cut into bite size pieces. Smaller pieces will absorb flavor faster. Put into a glass container. Mason jars work well.
 - Combine water, sugar, and vinegar in a small saucepan. Heat and stir until sugar is dissolved.
 - Pour hot liquid over vegetables.
 - Put in refrigerator. They are ready to use within 30 minutes. Will store for up to 2 weeks.
