You'll Need:
  
- Delicious vinegar of your choice
 - Fresh herbs
 - Fresh garlic
 - Enough jars with lids to contain your flavorful infusions.
 
    Directions:
  
- Select fresh herbs: chives, rosemary, sage, oregano, etc.
 - Rinse off herbs and gently pat them dry.
 - Lightly crush herbs to release flavor and fragrance.
 - Place herbs into clean jars; no need to sterilize jars.
 - Add gently crushed garlic to taste. (We use a lot!)
 - Pour vinegar over herbs to cover.
 - If your lids are metal, place a piece of wax paper or plastic wrap over the jar mouth to prevent vinegar from contacting metal.
 - Seal lids; store jars in a dark place (like your cupboard or pantry) for at least two weeks and up to six weeks.
 - Strain infused vinegar and discard herbs & garlic.
 - Store vinegar in a tightly closed jar or bottle and label with the flavor and the date.
 - Will keep and be useful for weeks! Use in dressings and sauces, or sprinkle over prepared food to add flavor.
